Description
Bitterballen is a beloved Dutch specialty from the Netherlands.
Beef shin is slowly braised with a classic mirepoix until meltingly tender, then finely shredded and folded into a rich, thick velouté made from the deeply flavoured braising broth. The mixture is chilled, rolled into balls, coated in crisp breadcrumbs, and prepared for frying to golden perfection.
